OPEN FACED MEAT LOAF SANDWICHES

Ingredients:

  • 1 lb. ground chuck
  • 13 c. chopped green pepper
  • 13 c. chopped onion
  • 13 c. soft bread crumbs
  • 14 c. skim milk
  • 1 egg, beaten
  • 1 tbsp. reduced calorie catsup
  • 14 tsp. garlic powder
  • 14 tsp. salt or Papa Dash
  • 14 tsp. pepper Vegetable cooking spray
  • 1 (8 oz.) can no salt added tomato sauce
  • 14 tsp. dried whole oregano
  • 14 tsp. dried whole marjoram 6 (12 inch thick) slices Italian bread, toasted

Directions:

  1. Combine first 10 ingredients in a medium bowl; stir well.
  2. Spoon mixture into a 7 12 x 3 x 2 inch loaf pan that has been coated with cooking spray.
  3. Bake at 350 degrees for 1 hour and 10 minutes.
  4. Cool in pan 5 minutes.
  5. Remove from pan; drain well on paper towels.
  6. Let stand 5 minutes before cutting into 1 inch slices.
  7. Combine tomato sauce, oregano, and marjoram in a small saucepan.
  8. Bring mixture to a boil.
  9. Cover; reduce heat, and simmer 10 minutes, stirring occasionally.
  10. Place toasted bread slices on serving platter.
  11. Top each slice with a meatloaf slice.
  12. Spoon 2 tablespoon tomato sauce over each sandwich.
