Bread is one of the staples that man has for food.  No matter if it comes from a bakery, the supermarket or made in your own home, the fact that it provides comfort is constant.  However, it is more enjoyable and pleasurable to eat bread that is homemade.  If it comes out from a breadmaker, it’s fresh, hot and made of the best ingredients the world can offer.

With just the simple ingredients of flour, water, yeast, and salt, you can enjoy beautiful and great tasting loaves of bread.  The temperature of the water is important in the baking of bread.  It has to be 105 to 115 degrees Fahrenheit for the yeast to work.  If the water it too hot, it can kill the yeast.  Make sure also that the yeast you use is freshBread MakingWhen it comes to the flour, always start with a smaller amount than what it listed in the recipe book.  Add more flour to the mix as needed.  It would be easier to determine how much flour you need if you let the dough sit for a few minutes.  The liquid has enough time to get into the flour.

Put the dough you’ve made in a warm place.  Warm doesn’t mean hot, mind you.  To test if the dough size has doubled up, press two fingers into the dough.  The indentations of your finger should stay on the surface.  If it does, this means, you can now shape the dough.

Before shaping the dough, sprinkle flour on the surface where you’ll be working the dough.  Sprinkle more flour on the dough as well.  Start kneading with the part of the dough that is closest to you.  Push down and away from you with the heel of your hands.  Lean on the dough and give the dough a one quarter turn.  Pick up the far end of the dough and fold toward you.  You’ll know the dough is ready if it doesn’t stick to your fingers.

Add salt to the dough.  If you would like a chewy crust, spray the loaves with cold water before baking.  If you would like a crusty bread on the other hand, use low protein flour so that the crust that will result is thicker.  If you like a crust that is shiny, combine a slightly beaten egg with 1 tablespoon of water and brush the loaf before baking.
